Content / Overview
This exciting short course allows young aspiring chefs to work alongside professional chefs who will be teaching them new skills to a professional standard.
Aimed at young people between 12 - 16 years of age, this course is ideal for those who have a passion and interest in cooking and who wish to develop these skills further so that they can progress on to a professional cookery course in the future.
Learners will be taught the latest up to date skills and techniques relevant to the Hospitality and Catering Industry.
Guildford College gives you the chance to experience a "real" professional kitchen. You'll learn to prepare and cook fresh ingredients under the friendly guidance of our expert, professional chefs.
The course will be delivered in one of our three professional kitchens. The young chefs will learn various cooking and preparation skills as well as kitchen safety and knife skills. The course will begin with an introduction to commercial equipment and how to handle and use equipment safely. You will be covering a range of different foods from vegetables, soups, pastas, sauces, meat, fish desserts and more.
On the final week, the Junior Chefs you will be presented with a certificate of achievement.

Week 1 - Pastries: Danish croissants pan au chocolate
Week 2 - Fish preparation cooking skills - steamed fish and fried fish, potatoes/pasta and seasonal vegetables
Week 3 - Beef stew, boiled seasonal veg, boulangere potatoes
Week 4 - Afternoon tea, scones, brownies, macaroons
Week 5 – A selection of breads and butters
Week 6 – Creating curry and rice - both Indian and Thai

This is a great opportunity for young people who have shown an interest in exploring catering as a possible career, and it will give them an early insight into whether catering is an avenue they would like to pursue in the future.

Apply direct – no interview necessary
As a Young Chef of the future you will not need to have had any other training to apply for the course, but we will need your parent/guardian to complete a medical questionnaire which must be received before the start of the course.
Throughout the course you will be required to wear non-slip shoes that cover and protect your feet, black trousers and a white T-shirt. You’ll also need to bring a container to take home your finished dishes to enjoy with your family.
When you are aged 16 you may want to progress to a full time course with us at Guildford College, and complete either a Level 1 or level 2 Diploma in Professional Cookery.
The cost of this course is £60 per Junior Chef. You must come into the College seven days before the course to make payment and complete enrolment.
All students aged 19 years or over on 1 September in the first year of their course are expected to pay tuition, registration, exam fees and all other course related costs. Some assistance with these costs may be available depending on your circumstances and the latest government funding position.
There are normally no tuition, registration or examination fees to pay if you are aged 16-18 on 1 September in the first year of your course and are a British or European Union resident. This does not apply to HNCs/Ds, Foundation Degrees, Degrees or courses that do not attract government funding (identified as 'no fee remission available on this course').
