Content / Overview 

This Advanced Cookery qualification is ideal for those wishing to progress within the industry to more responsible and senior roles. This qualification aims to equip you with the necessary skills to enrol on these career paths and to learn, develop and practise the skills required for employment and/or career
progression in the Hospitality and Catering sector.

Topics include:

  • Producing vegetable and vegetarian dishes
  • Producing meat, poultry and game dishes
  • Producing fish and shellfish dishes
  • Exploring gastronomy
  • Supervisory skills

All 16-19 year olds on full-time programmes will be required to retake GCSE English and Maths or to undertake Functional Skills, if they have not already attained the equivalent of a GCSE grade C in these subjects, every year of their course, until they complete their studies.

Entry Requirements

You should have achieved a Professional Cookery Level 2 Diploma, plus Maths and English Language GCSE at grade 4 (grade C) or above. You will also need to have completed vocational employment within the industry.



Delivery Method

Practical lessons are delivered in a kitchen and restaurant environment. Some classroom theory classes.


Homework

You will be assigned weekly homework in theory and practical classes. As well as assignments, portfolio building and revision.

Assessment

This qualification is assessed in a number of ways. The types of assessments include: knowledge and understanding tasks, internally marked questions, individual practical tasks and synoptic practical assessments.


Further Study

On successful completion you could go on to study at degree level, complete a higher (Level 4) Apprenticeship or pursue employment.



All students aged 19 years or over on 1 September in the first year of their course are expected to pay tuition, registration, exam fees and all other course related costs. Some assistance with these costs may be available depending on your circumstances and the latest government funding position.

There are normally no tuition, registration or examination fees to pay if you are aged 16-18 on 1 September in the first year of your course and are a British or European Union resident. This does not apply to HNCs/Ds, Foundation Degrees, Degrees or courses that do not attract government funding (identified as 'no fee remission available on this course').
