Content / Overview

This course runs 9.30am to 12.30pm on Mondays.

This is a practical cookery course, for adults to learn new skills and enjoy cooking with the help of a professional chef. We will teach you how to get great results in just six weeks to show off to friends and family.
The course will show you how to prepare dishes and how to organise a dinner party or a general dinner with confidence and inspire you to create your own dishes.

Course Modules

You will be looking at preparing a wide range of recipes suitable for all occasions, whether for informal dinner party or entertaining friends. Recipes will include full preparation of meat and fish skills to create different dishes as well as desserts and baking.


Week 1:  Prepare a whole fresh chicken, then prepare three different dishes and various sauces to complement the dishes as well as seasonal vegetables.

Week 2:  Artisan style bread making and fresh Danish pastry

Week 3:  Indian style curries, Lamb madras, chicken tikka served with fluffy pilaff rice and naan breads

Week 4: Thai green curry, beef pad-Thai noodles with steamed rice

Week 5: Fresh Italian pasta making, raviolis, tortellini’s, classic tomato sauce from fresh and three cheese sauce

Week 6: Beef bourguignon, dauphinoise potatoes and petit pois a la francais

Entry Requirements

This course is suitable for all abilities, from beginners to those with more knowledge and experience of cooking. With the guidance of professional chefs you will be fully supported to achieve your goals on the course.

We will be looking at vegetarians’ dishes, we can expand on this if the group wish to and make suggest on alternative ingredients.

Delivery Method

For you to take the food home you will need to bring in suitable containers. Please bear in mind that some food will be hot or liquid-based, e.g. stews, casseroles or soups, so the containers should be heat-proof and air-tight. Bring a pen, and your reading glasses (if you use them), so that you can read and make notes about the recipes. It is important to wear clothes and closed footwear no trainers or high heels suitable for a busy, hot kitchen.


There are no formal assessments.

Additional Information

Please ensure that full payment is made 2 weeks before the start of the course.

All students aged 19 years or over on 1 September in the first year of their course are expected to pay tuition, registration, exam fees and all other course related costs. Some assistance with these costs may be available depending on your circumstances and the latest government funding position.

There are normally no tuition, registration or examination fees to pay if you are aged 16-18 on 1 September in the first year of your course and are a British or European Union resident. This does not apply to HNCs/Ds, Foundation Degrees, Degrees or courses that do not attract government funding (identified as 'no fee remission available on this course').
